| Description | Chitinase Activity: ≥200 units/g solid. Chitinase is an extracellular enzyme complex that degrades chitin. It has been detected in many microorganisms and also in the digestive tracts of many animals that feed on chitin-containing organisms. The enzymatic hydrolysis of chitin to N-acetyl-D-glucosamine is performed by two consecutive enzyme reactions. The first one, chitodextrinase-chitinase is a poly(1,4-β-[2-acetamido-2-deoxy-D-glucoside])-glycanohydrolase (EC. 3.2.1.14), which removes chitobiose units from chitin. The second one is N-acetyl- glucosaminidase-chitobiase, which cleaves the disaccharide to its monomer subunits, N-acetyl-D-glucosamine (NAGA). The optimal reaction temperature is 37°C.
